Place the flour into a ziplock bag, add the shrimp, salt, + pepper- shake until coated.
In a bowl, whisk together the two eggs. Add the panko to a separate bowl. Line the air fryer basket with tin-foil.
Take a shrimp, dip it in the egg, then dip it into the breadcrumbs, shake it, then place it on the foil. Repeat for all. Then, spray them all with oil.
Set the air fryer to 400 degrees F. Set to desired browning. Fry for 6-7 minutes, then turn over, fry for another 3-4 minutes. Meanwhile, mix together the yogurt, mayo, chile sauce, + sriracha and chop the scallions.
Let the shrimp cool for 5 minutes. Then toss together with the scallions + sauce.
