Pork tenderloin is lean protein and super easy to toss it in the slow-cooker with the BBQ sauce, then at meal time- chop some veggies, quick prep some ramen noodles, and make the spicy aioli.

For the Bowl
 1 lb pork tenderloin
 1 bottle of Korean BBQ sauce
 2 cups Ramen noodles, Lotus foods jade green
 4 cups purple cabbage, shredded
 4 tbsp scallions, chopped
For the Carrot Mash
 1 bunch of carrots, peeled, steamed, + mash
 2 tbsp miso paste
 2 tsp honey
 1 tbsp rice vinegar
 1 tsp sesame oil
 1 garlic clove, minced
For the Spicy Aiolo
 4 tbsp paleo mayonnaise or avocado-oil based mayonnaise
 4 tsp Sriracha sauce or chili oil

Slice the pork tenderloin into 1-inch thick slices. Place it in a slow-cooker with the BBQ sauce for 3 hours on high. No slow cooker? You can saute it in a pan over medium heat for 10-12 minutes.

Steam the carrots + mix together the sauce ingredients. Mash it all together.

Prepare the noodles according to the package while chopping the scallions and the cabbage.

Serve all together in a bowl with the spicy aioli.
