
This is a simple, paleo-friendly bread to use for a quick morning "toastie" with a green juice or the side to your lunchtime salad. I love how hearty it is and still gluten free!
2 cups coconut flour
1 ½ cups tapioca flour
1 cup flax meal
¾ cup coconut oil; melted
8 large eggs
½ cup water
1 tbsp apple cider vinegar
4 tsp baking soda
1 tsp sea salt

Preheat the oven to 350 degrees F.

Mix all of the dry ingredients together in a medium bowl. Mix the wet ingredients together well; then slowly stir them into the dry ingredients.

Pour into a lightly oiled bread pan. Bake for 60-65 minutes. Let cool before slicing.
