RECIPE REHAB: Air Fried Vegetable Egg Rolls

 2 cups Cabbage, shredded (QUICK TIP: buy bagged pre-shredded)
 1 cup bean sprouts, washed well + patted dry
  cup carrot, peeled + shredded (QUICK TIP: buy bagged pre-shredded)
 1 cup green onion, chopped
 2 tsp fresh ginger, minced
 2 garlic cloves, minced
 2 tbsp rice vinegar (I buy brown rice vinegar)
 1 ½ tbsp Bragg's liquid aminos or Coconut Secret Coconut Aminos (gluten-free, naturally low-sodium soy sauce alternatives)
 12 gluten-free egg roll wraps
 cooking spray, to help rolling

Mix the cabbage, bean sprouts, + carrot together in a bowl.

Over medium heat with a bit of cooking spray, heat the scallions, garlic, + ginger for 5 minutes. Stir in the cabbage mix, then aminos + rice vinegar- combine well + refrigerate 10-15 minutes.

Place an egg roll wrapper (if you decide to make your own to ensure they are gluten-free, prep the mix + make them according to the package first: https://www.amazon.com/Gluten-Free-Egg-Rolls-Wonton-Wraps/dp/B01M6ALIW2/ref=sr_1_8?keywords=gluten+free+egg+roll+wraps&qid=1564426722&s=grocery&sr=1-8) in front of you like a diamond, place 3 TB of mix inside, then roll it up from the bottom, pull the two sides in, then, after lightly dampening the tip top spot, roll it over it all and around. Repeat 12 times.

Spray the egg rolls lightly with a cooking spray. Turn the air fryer on to 390 degrees F. Cook the egg rolls first (seem side down) for 6 minutes, then use tongs to turn them over + cook for another 6 minutes. You may need to work in batches depending on the size of your air fryer.
