It is simple swaps that can rehab a recipe so that you do not have to go without your favorites, but instead can eat it without the guilt.

 4 cups Cauliflower, riced
 3 Italian chicken sausage (mild or spicy,) sliced
 ½ jar vodka sauce (I use Rao's because it doesn't have heavy cream)
 1 cup Parmesan, shredded
 4 cups baby spinach
 oil, to cook
 1 small shallot, minced

Prep: slice the sausage links and chop the shallots + basil.

In a skillet over medium heat, cook the sausage slices, set aside. Add in the cauliflower with 3-4 sprays of oil. Cook for 8-10 or until softened. Add in the shallot - cook 2 minutes.

Add in the vodka sauce, sausage, spinach, + parmesan. Warm.

Top with chopped basil + extra parmesan.
