No-bake Pumpkin Cheesecakes

makes 4-6 individual servings

What You Need:

    • 8 oz. package cream cheese softened
    • 2 TB hemp milk
    • 2 TB organic or coconut sugar
    • 1 tsp vanilla
    • 2 cups frozen whipped topping, organic
    • 2 small boxes instant vanilla pudding
    • 1 cup hemp milk
    • 15 oz. can pumpkin puree
    • 1 tsp cinnamon
    • 1/2 tsp pumpkin pie spice
    • 1/4 tsp ginger
    • 1/4 tsp clove

To Make:

  1. In a small mixing bowl, beat cream cheese, 2 TB milk, sugar, and vanilla until smooth.
  2. Fold in frozen whipped topping (start with it room temp.)
  3. Spread this mixture evenly into individual ramekins.
  4. In a large bowl, whisk together vanilla pudding mixes, 1 cup milk, pumpkin, and spices until smooth.
  5. Carefully spread the pumpkin mixture over the cream cheese layer in each ramekin.
  6. Refrigerate for 2-3 hours.
  7. Serve with a dollop of frozen whipped topping + a dash of pumpkin pie spice.

Candy Corn + Clementine Trifles

Simply layer frozen organic whipped topping with alternating candy corn + clementines. Quick, easy, TASTY!

Caramel Apple Nachos

makes 2 servings

What You Need:

  • 2 green apples, sliced
  • Wax Orchards fruit-based “fudge”
  • Low-sugar caramel sauce
  • Slightly melted white chocolate chips

To Make:

  1. Simply lay out the apple slices + drizzle warmed ingredients on top to look like a spiderweb of sweetness!

Pretzel + Marshmallow Broomsticks

makes 8-10 individual brooms

What You Need:

  • 8-10 pretzel rods
  • 8-10 marshmallows – I love using the fresh vanilla ones made locally because they are more natural and softer
  • Organic orange icing

To Make:

  1. Place half of a pretzel rod into a marshmallow + stick it atop some icing dip! Simple as that!
