INTRO TO A NEW NOODLE:

What are shiritaki noodles? They are actually about 97% water and 3% glucomannan fiber from varied plant-based foods like yams (depending on the brand.) They’re a super low-calorie “mock pasta” with no digestible carbohydrates. Some refer to it as a “miracle” noodle replacement with literally near 0 calories and a neutral flavor profile.

 

Spicy Rainbow Shiritaki Pasta

makes 1 bowl

For the Bowl:

  • 1 package of Shirataki noodles; rinsed according to the package – QUICK TIP/GROCERY TIP: this is a form that is pre-flavored so you could even forgo a sauce! Even faster in the kitchen!
  • 2 TB radish or watermelon radish, cut into matchsticks
  • 1/4 cup orange + yellow carrot, cut into matchsticks
  • 2 TB avocado, diced
  • Handful of mung bean sprouts
  • 1/2 cup edamame, shelled
  • 2 TB roasted nori seaweed, krinkled
  • 1 TB scallions, chopped
  • 1/4 cup cucumber, sliced + quartered
  • 1 TB black sesame seeds

For the Sauce:

TO MAKE:

  1. Pre-chop all of the vegetables
  2. Prepare the noodles
  3. Mix together the sauce ingredients
  4. Serve + enjoy
