INTRO TO A NEW NOODLE:
What are shiritaki noodles? They are actually about 97% water and 3% glucomannan fiber from varied plant-based foods like yams (depending on the brand.) They’re a super low-calorie “mock pasta” with no digestible carbohydrates. Some refer to it as a “miracle” noodle replacement with literally near 0 calories and a neutral flavor profile.
Spicy Rainbow Shiritaki Pasta
makes 1 bowl
For the Bowl:
- 1 package of Shirataki noodles; rinsed according to the package
– QUICK TIP/GROCERY TIP: this is a form that is pre-flavored so you could even forgo a sauce! Even faster in the kitchen!
- 2 TB radish or watermelon radish, cut into matchsticks
- 1/4 cup orange + yellow carrot, cut into matchsticks
- 2 TB avocado, diced
- Handful of mung bean sprouts
- 1/2 cup edamame, shelled
- 2 TB roasted nori seaweed, krinkled
- 1 TB scallions, chopped
- 1/4 cup cucumber, sliced + quartered
- 1 TB black sesame seeds
For the Sauce:
- 2 TB paleo mayo -GROCERY TIP: I love paleo-approved @PrimalKitchen
- 2 tsp Sriracha (or more if you like is spicier) – my new obsession is the fermented kimchi @wildbrine Sriracha
- Dash of coconut aminos
TO MAKE:
- Pre-chop all of the vegetables
- Prepare the noodles
- Mix together the sauce ingredients
- Serve + enjoy
