Summer Peach Panzanella Salad
INGREDIENTS
- 3 cups organic heirloom tomatoes, chopped
- 1 cup organic peaches, chopped
- 3 slices whole grain gluten free bread, brushed with olive oil, grilled in a pan, and chopped into cubes
- 1/4 cup organic basil, coarsely chopped
- 1/8 cup white balsamic vinegar
- 1/8 cup cold-pressed extra virgin olive oil
- sea salt & pepper, to taste
INSTRUCTIONS
- Mix it all in a bowl and voila!
