5-Minute Peach Chicken Salad

QUICK PREP TIP:

I love to buy rotisserie chickens (generally organic + plain) + peel the skin off and shred it into tupperware with a fork for the week ahead. I use it in salads, soups, atop a toasted slice of whole grain bread, anywhere…this summer salad is amazingly easy + a good way to use that chicken you thankfully didn’t have to cook yourself!

5-Minute Peach Chicken Salad

What You Need:

  • 1 rotisserie chicken, skin removed + shredded
  • 3 cups mixed greens
  •  2 peaches, sliced
  • optional: 1 small shallot, minced
  • 1/4 cup paleo mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tsp sea salt
  • 1 tsp red pepper flakes
  • drizzle of lemon juice

To Make:

  1. Simply mix all of this together in a medium bowl + serve when ready!
