Spicy Shrimp Salad with a Miso Dressing

What You Need

makes 2 servings

Cook shrimp with:

  • 1 TB Earth Balance avocado butter spread, melted
  • 1 tsp chili powder
  • 1/2 tsp cayenne
  • 1 garlic clove, minced

For the dressing:

  • 1, 1-inch piece of fresh peeled ginger
  • 3 TB avocado oil
  • 3 TB lime juice
  • 2 TB agave nectar
  • 1½ TB white miso
  • ½ tsp garlic, minced
  • ¼ tsp sea salt
  • dash of red pepper flakes

Make the salad with:

  • 1 bunch, pan-grilled asparagus
  • 1 watermelon radish, sliced
  • 2 TB scallions, sliced

To Make:

  1. Simply cook the shrimp in a skillet over medium heat until opaque. Meanwhile, pan-grill the asparagus + mix the dressing ingredients together in a small bowl.
  2. Plate all together + divide amongst two plates.
