Spicy Shrimp Salad with a Miso Dressing
What You Need
makes 2 servings
Cook shrimp with:
- 1 TB Earth Balance avocado butter spread, melted
- 1 tsp chili powder
- 1/2 tsp cayenne
- 1 garlic clove, minced
For the dressing:
- 1, 1-inch piece of fresh peeled ginger
- 3 TB avocado oil
- 3 TB lime juice
- 2 TB agave nectar
- 1½ TB white miso
- ½ tsp garlic, minced
- ¼ tsp sea salt
- dash of red pepper flakes
Make the salad with:
- 1 bunch, pan-grilled asparagus
- 1 watermelon radish, sliced
- 2 TB scallions, sliced
To Make:
- Simply cook the shrimp in a skillet over medium heat until opaque. Meanwhile, pan-grill the asparagus + mix the dressing ingredients together in a small bowl.
- Plate all together + divide amongst two plates.
